How to make it
- Whisk eggs with a pinch of salt. Heat 1 Tbsp oil in a wok or wide skillet over high, scramble the eggs until just set, transfer to a plate.
- Add remaining oil. Toss in scallion whites and garlic; stir 30 seconds. Add peas & carrots and stir until warmed through.
- Add cold cooked rice, breaking up clumps with a spatula. Fry undisturbed for 1 minute so it toasts on the pan.
- Push rice aside, drizzle in soy sauce and sesame oil, then toss everything together. Fold in scrambled egg and scallion greens.
- Taste and adjust with more soy. Serve immediately in warm bowls.
Tips
- Cold, day-old rice is non-negotiable — fresh rice steams instead of fries.
- Add a handful of frozen shrimp or diced ham to bulk it up.
