How to make it
- In a wide pot, toast thinly sliced garlic in olive oil over medium-low until pale gold — 3 minutes. Don't let it brown.
- Add 4½ cups water, a big pinch of salt, and the spaghetti. Break the strands in half if needed.
- Cook uncovered over medium-high, stirring often, until pasta is al dente and water has reduced to a glossy sauce — about 10 minutes.
